Stocking the Freezer.

I've gotta admit, it's nice to feel like pretty much everything is ready for this sweet baby's arrival. He's got a place to sleep, nurse, get changed, ride in and sit in, not to mention a cuddle-happy mommy & daddy, an anxious big brother and a grandma all set to give him the snugglefest of a lifetime.

The second to final item on my "Getting Ready for Baby" checklist was preparing a few meals in advance and stocking up up the freezer with homemade (and otherwise prepared) dinners. I managed to cook five or six recipes, which is probably about 8-10 evenings worth of meals!

We haven't eaten them yet, so I won't post the recipes since I'd hate to lead you astray with flavorless, soggy, slow-cooker meals that simply fed our bellies, but I made things like chicken curry, savory vegetable soup, chinese pork hot pot and beef stew. A few were just prepped so they could be dumped in a slow-cooker for the day and others were fully-cooked and just need to be reheated. I also stopped at Trader Joe's to pick up some prepared and frozen snacks and meals - I try to find the stuff that's as natural as possible without a ton of salt and preservatives.

Hopefully this will keep us full for a few weeks after the baby arrives. And if it doesn't, well, there's always Grub Hub.
